Torta fritta emiliana

The torta fritta, or the gnocco fritto, in Emilia, is much like the pittuli of Calabria  - a traditional, portable, worker’s food, it too is a kind of fried cake, but made with lard and shaped like little pillows (they are also called crescentine, because they puff up when they are fried). Accompanying salumi very welcome, but not mandatory.
